Best Carrot Cake Recipe

I am almost always asked for this recipe whenever I make it… it is EXCELLENT.

note that it calls for 2 10 inch pans- I just make 3 layers of 8 inch or an 81/211 single layer if I am tight for time.

Carrot Cake

3 c all-purpose flour
2 1/2 c sugar
1 tbs. baking soda
1 tbs. cinnamon
1 tsp. salt
4 large eggs
1 1/2 c salad oil
1 tsp. vanilla extract
2 c packed shredded carrots
2 c chopped walnuts (optional)
1 20 oz. can crushed pineapple (w/juice)

Preheat oven to 350 degrees F. Grease and flour two 10-inch round
cake pans. In a large bowl with a spoon, mix flour, sugar,
baking soda, cinnamon and salt.

In a small bowl, with a fork, beat eggs slightly. Stir in salad
oil and vanilla extract. Stir egg mixture, shredded carrots,
walnuts and crushed pineapple into flour mixture just until
flour is moistened.

Pour batter into pans. Bake 40-45 minutes until toothpick
comes out clean. Cool cake in pans on wire racks for
10 minutes. Remove cake from pans; cool completely on
racks.

When cake is cool, frost with Cream Cheese Frosting (below).

Cream Cheese Frosting

In large bowl, with mixer at medium speed, beat 12 oz package
of cream cheese (softened), 1/2 c butter (softened), 1 tbs.
lemon juice and 1 1/2 tsp vanilla extract until smooth.
Gradually beat in 5 1/2 c confectioners’ sugar until smooth.

    Try Scrapbooking While Travelling!

    We go to Florida for most of the winter. One of the most fun things I get to do while there is visits other scrapbook and craft stores.
    It is one of the easiest ways to meet people as well as try new products or get new ideas.

    We also go away to Boston every year for two weeks. One of my favourite things to do- especially when visiting a city for the first time is to look at sightseeing tours.

    On a shorter visit finding things to do in Boston is never a problem. The whole city is very tourists friendly. On longer visits it gets harder to find things that don’t cost a lot of money and are interesting. What I have always enjoyed doing is visiting different crafts stores and especially the smaller craft and scrap booking stores that are independently owned an operated. It is one of the easiest ways to meet people as well as try new products or get new ideas.

    I bring my bare minimum of stuff - and photos are certainly never in short supply when traveling! Every scrapbook store will have a “crop” session you can go to. You pay a small fee and can use al there tools. It is one of the easiest and fun ways to meet people as well as try new products or get new ideas.

    Passover and Pesach Crafts

    A nice list of crafts to do for passover . In our home I try and do crafts with kids to explain different religions and cultures. Engaging kids with a crafts and discussing ideas and thoughts about other religions is a good way to help increase tolerance and acceptance of others with different beliefs.

    Looking for Mother’s Day Ideas!

    What the Heck is a Sedona Method?

    I have been reading on all kinds of blogs about the sedona method and feel a bit out of the loop? Is it some kids of new cult or something? I know it has something to with The Secret that Oprah is always going on about. I have been embarrassed to ask what it even is.

    After doing some reading it seems to have something to do with the so-called laws of attraction- that we attract what we think about ( I am thinking of a Cricut machine and fonts being delivered to my house by Brad Pitt).
    The idea is to let go negative thoughts and emotions and the “inner voice” that tell us we are fat, no good, can’t do it, are too old or not talented enough . or if you are always worrying about money and not having enough ,etc. The ideas is to get rid of your resistance . It is not enough just to think of what we do want in life- but to get rid of the “bad” thoughts we are having and holding us back.

    So far I can agree with the concept. Letting go of negative thoughts and ideas that are weighing me down and letting in positive thoughts that will attract what I want into my life.

    Gorgeous technique for Adding Color To Stamps- Colored Pencils and Mineral Spirits

    This is absolutely stunning. Just picked up bunch of “nice” pencil crayons on ebay to try- Use colored pencils with mineral spirits to color your stamp images. The results are similar to water colors but color looks much more vibrant. Wow- can’t wait to try!

    Help!! Nice Cross Stitch Designers?

    I know nice is subjective, I am looking for a new pattern to try I gave up trying to do my Lavender and Lace Celtic Christmas this year- too big a project to tackle I think.

    I am looking for designers similar to Lavender and Lace ot Mirabilia / Nora Corbett Designs. I like to use beads in my cross stitch patterns. Any ideas???

    Am I an Addict??? Craft User or Collector?

    I cannot stop buying craft supplies. I have bought stamps, Tim Holz crackle paint, new markers, , 2 tape runners and clear stamp holder this week. I feel bit out of control. Feel i must OWN everything!
    I was seriously contemplating buying a new Crisut machine yesterday, On the provocraft website you can buy one an pay in five easy installment of 49.95. The shipping and handing was 24.88 and this seemed outrageous so I didn’t. What is wrong with me??!!
